This is a recipe that my titi (aunt) C makes. Lìmber is a frozen treat typical of Puerto Rico. It´s good! This recipe makes about twenty 3-oz. limbers.
Ingredients for milk mixture
4 c. milk
1 can (12 oz.) evaporated milk
1 can (13.5 oz.) coconut milk (optional)
2 c. sugar
Ingredients for egg mixture
1 egg yolk
1 T. sugar
½ T. cinnamon
¼ t. salt
1 T. vanilla
In a large saucepan, combine the milk, evaporated milk, coconut milk and 2 c. sugar. Warm and stir occasionally until the sugar dissolves completely. Do not boil.
In a separate bowl, combine egg yolk, 1 T. sugar, cinnamon, salt and vanilla. Stir egg mixture with a spoon until it is very smooth and blended. If necessary, spoon some of the warm milk into the egg mixture to make it easier to mix.
Add the egg mixture to the milk in the saucepan and stir. If the sugar is still not dissolved, keep warming the milk and stirring it occasionally.
Taste it! If you like, you can add a little more sugar.
Pour into plastic cups (3 or 5 oz.) and freeze.

For variety, titi C suggests trying to add one or more of these ingredients:
rice, corn meal, farina, oatmeal (cooked in the milk mixture)
1/8 t. ground clove
1 star anise
